Acrobat/Illustrator: How to stretch cell & add background color to text box?

I have a PDF document where I amended the text using Acrobat (touch up text tool). Problem is, adding an extra character into word string has caused the 1 character to spill out of table cell (black text on grey background) So now I need to widen the cell to enclose the character again. ...
